BACKGROUND
Vinified in 2009, this wine was ‘tiraged’ (bottled with yeast to create the bubbles) in 2011 and left for 8 years to mature. In that time the yeast has broken down to create a great texture which has further complemented the already full flavours of the rich Shiraz. After the maturation process, the yeast lees were removed from the bottle by ‘disgorging’ (freezing of the yeast plug in the neck) and the bottle was topped up with 10yr old Tawny Port.
TASTING NOTES
Rich chocolate and caramel are the main flavours here. True, there are some dark red fruits in the background but its really all about the disgorging liqueur... 10 yr old Tawny Port essence abounds and gives some life whilst a hint of sugar syrup fills the palate and complements the Shiraz richness. This is all cleaned up by classic sparkling bubble acidity…..Yum!
